Jim’s Favorite Cole Slaw
This month begins the traditional outdoor fish fry events and hot dog cookouts, which would not be complete without my Jim’s Favorite Cole Slaw. When I was growing up, my mother would regularly make a large bowl of her cole slaw during the summer, and one portion was never enough for me. This vinegary-sweet slaw is my favorite, and contains no mayonaise like some recipes do. I’ve used the best ideas from her original recipe to make this my own. Marinated Tomato and Cucumber Salad
With hot summer days right around the corner, one of my most-requested recipes for our covered dish luncheons in my apartment community is my Marinated Tomato and Cucumber Salad. With some of my friends, it’s almost like an addiction. I’ve got to admit that if it’s really hot outside, this chilled salad will cool you off in a hurry.
